Portal 2 Clean Textures

Since I have no idea of how to extract the textures from portal 2, I was wondering if somebody would please post some of the major CLEAN textures from the game that I can edit?

Theres no point us giving you the extracted Portal 2 textures to edit, because its practically the same method to re-import the edited textures. You might as well learn how to extract. Haapavuo provided a good guide

I followed this guide and some others online, but anytime I try to extract or even look at Portal 2's files, they just show up as blank folders, what am I doing wrong?

You have to open the pak01_dir.vpk. All other vpks are just parts of this pak01_dir.
