My favorite Dragon-based fantasy series are the novels of Temeraire and the Dragonriders of Pern.
Swamp dragons are little runty things that aren't much more than an animate chemical disaster. They eat anything and everything, have constant gut trouble from digesting all of this to turn it into something combustible and fight by puffing themselves up with fire until one either backs down or explodes messily. They shouldn't be left near mirrors for obvious reasons.
Re: reading Discworld - bear in mind that the first few books aren't quite the same as the later ones where the characters are better developed. Death in the first books actively kills people, but after two or three books he quite likes humans and just collects their souls. He has a real horse called Binky because his bone horse kept falling apart. 39 books may seem quite a lot (well, it is quite a lot) but you don't really have to read them all in order. They'll obviously make better sense that way, but they are sort of grouped into mini-series. Try starting with Guards Guards!, the first book with the City Watch.
The major city in it is has an embassy in a town near where I live.
