Missing info_paint_sprayer keyvalues?
However, the FGD definition of "info_paint_sprayer" seems to be incomplete because it gives no control over the blob size. Do anyone else have that problem? Is there a custom FGD that has the missing keyvalues? For now, I have to add them myself in the entity by turning off "SmartEdit".
The blobs, simply put, merge when closer together, making the blob seem bigger. And so, more blobs means bigger blobs, and more paint.

There are indeed missing keyvalues, any sprayer from a Valve map has at least 4 non-smartedit properties.
If you don't include those values it's very hard to get anything other than a slow drip or a constant pour.
Also, look into the prop_paint_bomb entity. It's job is spawning giant blobs that burst on impact: imagine huge gel-filled water balloons. It might be easier to use the prop_paint_bomb to achieve your desired effect.
My best advice is to find a gel sprayer from the standard levels that you like, and just copy-paste the values. Otherwise you might go insane trying to get gel blobs precisely 32 units wide
