Here's a site of beginner tutorial videos for the Valve Hammer Editor that I put together awhile back. It's not Portal mapping specific, but all the things you learn in the beginner series of tutorials are used while making Portal 2 maps. Or Left 4 Dead and Team Fortress 2 maps for that matter.
