I know I'm probably going to be labeled a newbie for this, but what is the second-to-last symbol on the numbered test chamber signs? There's cube-dropper, person hit by cube, person hit by high energy pellet, high energy pellet entering catcher, person being killed by goo, person jumping into a portal, person using a basic fling, a person being shot by a turret, and then something else - a person leaning over something which almost reminds me of a water fountain - and then finally cake.

So what is the second-to-last symbol? I think it has something to do with moving platforms, or something like that, but honestly, it's driving me crazy, and I'd love it if someone could explain what it is.

I think it was intended for a type of puzzle that never got implemented as it is never lit on any test chamber signs (that I can think of off the top of my head) .

It's lit in chambers 14, 15, 18, 19, and at least one other, the one where toxic goo is first introduced.

I always interpreted it as "Don't drink the water".

I assumed it meant something like don't drink the water.

Well, that makes sense, since, as I said, it shows up on chambers 14, 15, 18, 19, and the first chamber with goo, so "Don't drink the water" is probably a valid interpretation, unless someone has a better idea.
